From vine to

Each wine is born in the vineyard and directly reflects the natural conditions where it is produced. The introduction of varieties such as Caladoc and Seyval Blanc allows us to diversify production and explore new expressions of the Biscoitos region, always with the influence of the climate and the sea. In addition to wines, we also produce artisanal liqueurs, combining traditional recipes with a careful selection of ingredients.

Tradition and innovation on Terceira Island

The Origins

Dimas Adega was born from a deep connection to the land and traditions of Terceira Island. From the very beginning, innovation and boldness have been part of our DNA. It was with this vision that we introduced European grape varieties such as Caladoc and Seyval Blanc to the Biscoitos region, seeking to create distinctive wines without losing the identity of the territory.

The Terroir

Our vineyards are located on the north coast of Terceira Island, in an area marked by relatively young volcanic soils. The presence of basalt gravel makes the soil naturally fertile and rich in minerals. Together with the humid climate of the region, these conditions allow the development of grapes with higher sugar content and acidity. Varieties such as Verdelho and Arinto find a unique environment here, strongly influenced by the proximity to the sea, which is reflected in wines with mineral character.

Living Tradition

Dimas Adega is embedded in a region rich in culture and tradition. The Feast of the Holy Spirit, associated with the volcanic history of the island, and the Corn Harvest Festival are living examples of the identity of Biscoitos. These traditions form part of the context in which we produce, maintaining a constant connection between the land, the community and what we create.

"Working at Dimas Adega is, above all, an exercise in patience and listening. My role is more than 'making' wine — it is allowing the vineyard to express itself without noise, contemplating the waves breaking on the Biscoitos coast. In the Azores, we deal with the irregular relief of volcanic rock and our tropical storms. In these wines, I sought to preserve the freshness, acidity and tropicality that the grapes gave us. The result are wines that don't ask permission to enter, but that tell the story of their origin in every sip."
